The Secrets Come Out...

Mexican Avocado Salad

A delicious salad that's always a hit - my sister's creation.

1 1/2 heads of romaine lettuce
1/2 red pepper - diced
1 tomato - diced
1 ripe avocado - diced
3 - 4 handfuls of barbeque tortilla chips - crumbled

3/4 cup mayonnaise
1 1/2 tbsp lemon juice
1/2 tbsp soy sauce
1/4 tsp salt
1 tbsp garlic powder
2 tbsp brown sugar

Soak the lettuce leaves with salt in cold water, then rinse and check each leaf for bugs.  Rip the lettuce into a medium sized salad bowl, and add the diced vegetables.

Place the mayonnaise in a bowl and stir until smooth.  Slowly add the lemon juice, stirring after each addition, make sure there are no bumps.  Add the soy sauce and mix.  Pour in the salt, garlic powder and brown sugar and mix well, until the sugar dissolves.  Pour desired amount of dressing over salad and toss well.  Sprinkle crumbled tortilla chips over the salad and serve.

TIP:  Store the leftover dressing in an airtight container and refrigerate - it will hold good for several days.
