Ingredients
2 lb. yams, rinsed and peeled
1 lb. parsnips peeled
10 shallots, peeled
6 large eggs beaten
¾ cup plus 2 Tbsp. Matzo meal
1 tsp. black pepper
1 Tbsp. coarse kosher salt
Oil for frying
Directions
Grate vegetables with course side of grater and toss together in a large bowl.
Add matzo meal, salt and pepper and mix well
Fry latkes in hot oil 2-3 minutes on each side.
Yields 2 dozen latkes.
